Next up in my mission to figure out chia seeds is a ridiculously easy strawberry chia seed jam. Three ingredients, thirty minutes, and you’ve got yourselves a fat jar of sweet jam for breakfast. This can be made with any berries, just alter the amounts as needed.
- 400g fresh strawberries
- 3 tbs chia seeds
- 1 tbs honey
Chop the strawberries into small pieces, and blitz briefly in a blender. Add a little water if necessary to help. Pour the strawberry mix into a saucepan, and heat until it begins to bubble. Simmer until the mixture thickens, which may take around half an hour.
Once thickened, stir in the chia seeds and add the honey. Add more honey to taste, depending on how sweet your strawberries are. Pour the mix into a jar, and store in the fridge for up to a week.
