Shrove Tuesday, a moveable feast of pancakes and sins.
- 1 cup of wholemeal self-raising flour
- 1 cup of milk
- 1 free-range egg
- A knob of butter
- A lemon
- Walnut pieces
Mix the flour, milk and egg and whisk well to create the pancake batter. Melt the butter in a pan, and use a ladle to spoon small round pancakes into it. Let them fry for a few moments on either side, or until lightly toasted.
Keep the pancakes on a plate in the oven under a low heat while you cook the rest of the batter. Mix ricotta and honey in a bowl, adjusting the amounts until you reach a thick consistency with the desired sweetness. Add a touch of cinnamon to taste.
Arrange the pancakes on a plate and spread with the ricotta honey spread. Top with blueberries, walnut pieces, a hint of lemon juice and a drizzle of honey.
