  • Halloumi
  • Sweet potato
  • Quinoa
  • Rocket
  • Pomegranate seeds
  • Olive oil
  • Lemon juice
  • Balsamic vinegar
  • Salt n’ Pepa

Cut the sweet potato into small pieces, and drizzle with olive oil and seasonings. Roast at 180C for around 30 minutes, or until soft. Slice the halloumi and fry in a pan until browned.

Cook the quinoa according to packet instructions (normally in simmering water for 10 minutes.

Layer rocket, quinoa, sweet potato and halloumi in a bowl. Sprinkle with pomegranate seeds, a little lemon juice, and a little balsamic vinegar to taste.
