No more Pity Party – welcome to the Pesto Party.
Ingredients:
Makes 12-15 pancakes.
- 1/2 cup of plain, wholemeal flour
- 1/2 cup semi-skimmed milk
- One egg
- 25g of fresh basil, chopped.
- Three tablespoons of grated parmesan
- Dash of olive oil
- Pinch of garlic
- Salt n’ Pepa
In a large bowl, mix the flour, milk and egg until smooth. Add basil, parmesan, garlic,olive oil and a pinch of salt and pepper, and blend with a food processor or hand blender until the basil has been liquidized and the mixture is a good solid green.
Heat up a little olive oil in a pan. Add a tablespoon of batter for each small pancake (around the size of a small scotch pancake) and fry on each side until cooked.
When all the pancakes are cooked, assemble them on a plate with slices of tomato and fresh mozzarella. Drizzle with olive oil and balsamic vinegar.
