In the future, bananas will be famous for fifteen minutes.
- 4 ripe bananas, mashed
- 2 small cups of wholemeal, self-raising flour
- 50g of butter, softened
- 2 eggs
- 3 tablespoons of honey
- 1/2 teaspoon of vanilla extract
- walnut pieces
- dark chocolate chips
- Honeycomb pieces
- Writing icing
In a large bowl, mix the bananas, flour, butter, eggs, honey and vanilla extract until smooth. Add a handful of walnut pieces, and a handful of chocolate chips. Pour the mixture into a circular cake tin, sprinkling a few more chocolate chips on top.
Bake at 180C (fan-assisted) for 30 minutes. Cake should remain slightly soft on the inside. Leave the cake to cool in the fridge overnight.
Once cooled, cut moon shapes out of the cake with a sharp knife. Arrange on a plate. Spread a little honey on top of each slice, then top with crushed honeycomb pieces. Use black writing icing to create the stem of the banana, and thin black lines running up it.
