A LOVEly salad.


  • Olive oil
  • Garlic
  • Sweet Potato
  • Salad
  • Raisins
  • Walnuts
  • Feta Cheese
  • Balsamic vinegar
  • Honey
  • Salt n’ Pepa

Cut the sweet potato into cubes and place them on a baking tray. Sprinkle salt, pepper and garlic on top, then drizzle with olive oil. Shake the tray to make sure they are all evenly coated, then roast for around 25 minutes, or until they are soft enough to poke easily with a fork.

Crumble feta cheese on top of the salad leaves, then sprinkle raisins and walnut pieces on top. When ready, add the cubes of sweet potato. In a cup, mix balsamic vinegar with honey to taste, then drizzle it on the salad.
