Fastest bread in the Wild Wild West.


  • 1 onion, cut into thin strips
  • 2 cloves of garlic
  • Large handful of spinach
  • One courgette, thinly sliced then quartered
  • 2 1/2 cups of flour
  • 2 eggs, beaten
  • 2 tsp baking soda
  • 3/4 cup Milk
  • 2/3 cup olive oil
  • Log of Goats Cheese, sliced
  • Salt

In a large pan, fry the onion until caramelised. Add the garlic, courgette, and spinach, then set aside when they are cooked through. In a large bowl, mix the flour, baking soda, and a large pinch of salt, then add the milk, olive oil and eggs. Stir until just blended. Add the vegetables from the pan to the mixing bowl, then the goats cheese and fold in until just combined again. Butter a bread pan or casserole dish, sprinkle with flour, then add the batter. Cook at around 180C for 40 minutes, or until the top has turned golden brown.
