This quiche is a real star.

Ingredients:

  • Filo pastry
  • Smoked salmon
  • Broccoli
  • Goat’s cheese
  • Creme fraîche
  • 2 eggs
  • Chives
  • A lemon
  • Garlic
  • Salt n’ Pepa

Line a pie dish with baking paper, then lay four sheets of filo pastry in it so that they spill slightly over the edge of the dish. Boil the broccoli for 5 minutes. In a mixing bowl, beat the two eggs then add chopped up smoked salmon, broccoli, garlic and goats cheese to the mixture. Add a dollop of creme fraiche, lemon zest and chives to taste. Season. Pour it all in the pie dish and cook for around 20 minutes. Tastes best cold, with salad.
