Looks like pasta…but it’s a vegetable. Crazy!
- A courgette (‘Zucchini’ for you Americans)
- Green pesto
- Feta cheese
- Salt n’ Pepa
Using a vegetable peeler, peel the courgette into fat strips, stopping once you reach the seeds in the middle. Toss into a frying pan with a handful of spinach, olive oil, and a little garlic. Leave to cook for about five minutes before mixing in the pesto and feta cheese, and serve with basil and seasonings on top. Done!
